Cheesorizo Fundido (Queso Sauce and Dip)

Wow them with this handmade, clean ingredient cheese sauce for dipping and nachos. Super easy and a real crowd pleaser.


1 chub Ancho Cumin Gia's Cheesorizo Cheese Sausage

2 TB olive oil

2 TB butter

2 TB amaranth or rice flour (for gluten free) use all purpose flour if it doesn't matter

1 cup whole milk

2 cups grated extra-sharp cheddar (or whatever mildness you prefer)

Pinch salt

Optional- red pepper flakes or a dash of hot sauce to make it spicier


The Cheese Sausage

Heat oil in a cast iron or non-stick skillet

Crumble in Cheesorizo and saute slowly, turning every few minutes, until crumbles are golden brown and almost crunchy

The Cheese Sauce

Melt butter in a sauce pan over medium high heat

Whisk in flour and cook for a couple of minutes, continuing to stir

Add milk a little at a time, stirring constantly, until thickened

Stir in grated cheese and heat until melted

Stir in cooked Cheese Sausage crumbles

Add salt and red pepper or hot sauce to taste
