Red Snapper Encrusted with Fiesta Cheesorizo®

Red snapper or other white fish

1 chub Fiesta Cheesorizo®

1 large egg

1/2 cup sour cream

1 lime

Fresh Cilantro

Pinch salt

Pinch ground cumin


Preheat oven to 350 degrees

Finely crumble and cook Cheesorizo® in a lightly greased skillet until golden brown

Whisk egg and place in a shallow dish

Dry fish fillets and drench in egg first then in Cheesorizo crumbles, reserve a tablespoon or more Cheesorizo for toppin

Place in baking dish and bake at 350 degrees for 15-20 minutes or until fish is done

Combine sour cream, juice of half the lime, half of the cilantro finely chopped, salt, and cumin

When done, top fish with sour cream sauce and garnish with cilantro leaves and a few Cheesorizo crumbles
